Professional Cookery Level 2 NVQ/ Diploma

What qualification will I achieve?
National Vocational Qualification/Diploma Level 2.This qualification is part of the Qualification Credit Framework.

How long is the course?
The NVQ is work-based and is designed to reflect the skills and knowledge of people who work in the hospitality industry.  The qualification is taken over 9-12 months depending on each individual.

What subjects will I study?
Three Mandatory Units as follows: (13 credits)

  • Maintain a safe, hygienic and secure  working environment
  • Work effectively as part of the hospitality team
  • Maintain food safety when storing, preparing and cooking food
  • Maintain and handle knives

Optional units (45 credits)

  • Prepare  fish and/or meat and/or poultry and/or vegetable and/or offal and/or shellfish for basic dishes
  • Cook and finish basic fish and/or shellfish and/or meat and/or poultry and/or game and/or offal and/or vegetable dishes
  • Cook and finish simple bread and dough products
  • Prepare cook and finish healthier dishes
  • Prepare, cook and finish hot sauces and/or soups
  • Make basic stocks
  • Prepare, cook and finish basic hot sauces and/or soups
  • Order stock
  • Complete kitchen documentation
  • Set up and close a kitchen

The above list is not exhaustive and many other units are available.

How will I be assessed?
The NVQ is assessed on practical aptitude and a portfolio of work.
